GOING BACK ON ORENCIA TODAY

 Today was a very busy day. I worked a lot, went for a walk to the post office, made a stir fry for dinner, and took care of some stuff for my ex-foster kid. My stir fry was made with butternut squash, zucchini, tofu, and broccoli. I ate it with Udon noodles. 

I am going back on Orencia today. I am hoping that it helps with some of my pain. For about two months now I have been having lots of pain in my knees. My left knee hurt so much I was wondering if I hurt it somehow. I knew I didn't fall or trip or twist it. I decided I needed to rest it and elevate it. So I stopped walking for my challenge and walking the dog. I put pillows in my bed so I could elevate my knee. I tried not to go up and down the stairs as much. I stopped squatting when I give Lucky her medicine. Instead I got a little stool to sit on. 

Just this week I noticed that my knee is not bothering me hardly at all. I think it was inflammation and not an injury to my knee.  In fact today Lucky and I walked longer than around the block for the first time in almost two months. So Hurrah!

CYBER MONDAY

 Cyber Monday. I did a little shopping. A little work. It was a day of doing small things that added up to big times. I started watching a new old series. Hot Zone. If you like apocalypse type shows this is for you. I have almost completed all my Thanksgiving leftovers. One more serving and I am done. The food was so good. 

I did order more Orencia. I decided to go back on Orencia now that my tooth infection is cleared up. I guess I will go back on until the next booster shot in January or February. There is no point in changing medicine during this endemic since I am going to on and off repeatedly. 

A boring day for a change.

VEGAN CHRISTMAS DOG BISCUITS

 Today was a day to make some vegan Christmas dog biscuits. I wanted to make them today so they are ready for Christmas for a present for Lucky. I am going to freeze some of them for the big day. I will surprise her with some biscuits. 

I will be using these in my annual Christmas card. I needed a prop for my photo. 

Lucky loves these cookies so much. She loves them but I need to limit the amount she eats since they are made with pumpkin. The pumpkin I had was so difficult to cut that I just only got the amount that I needed to make this recipe. It was the thickest pumpkin I ever had. I ended up putting the rest in the compost.

VEGAN KABOCHA SOUP

 Is this a lazy weekend or is it just me?  I feel like I just don't want to do anything major. I know I need to get my Christmas game started but I just don't feel like it. All I did today was wash dishes, turn on the dishwasher, do a load of laundry, walk around the block with Lucky, take my neighbor a slice of pie, and make kabocha soup. That is it in 10 hours. 

The kabocha soup is really kabocha/butternut squash soup. My kabocha was starting to go bad so I had to supplement the soup with some roasted butternut squash. It turned out very tasty but a bit thin. That is okay, I can drink it in a mug. It will freeze nicely and will be good if I get sick. All that ginger is good for a stuffy head.

MY DAY OF REST

 The day after Thanksgiving. I call it "My Day of Rest". I do not go out shopping even pre-Covid. I stay home and away from stores and people rushing around. I watch TV, movies, take a bath and eat leftovers. That is exactly what I did today. 

The only variation today was that I got an unexpected delivery. My power washer showed up today. My old power washer died and I recently had a large garbage pickup and had them take it away. I loaned my old power washer to a neighbor a couple of years ago and unbeknownst to me when he returned it, it was broken. About a year later, I went to use it and it didn't work right. It has been sitting broken for about two years waiting for me to get rid of it. I have a small car so it is hard to remove large items like that. Today the very nice UPS man arrived with my box, went to deliver another package while I made room in my garage for my box, then carried the box it into my garage and placed it in the spot I cleared out. Wasn't that nice?! My Fed Ex guy could learn a thing or two from him. My Fed Ex guy threw my box of canned dog food up my front steps (there are 12 of them) one day. We have come to a truce since then. I think I won him over with with my sparkling personality. Maybe I should try my baked goods??

That was basically my day. It is what I wanted to do and I did it. Tomorrow I will get going on other things like shopping and baking and Christmas stuff. I just wanted one day to tune out the world.

UNPLANNED THANKSGIVING DAY

 What a day! I had a whole plan for today and you know what: shot to h-e-double hockey sticks. The plan went awry when I took the job to make the pies. I have been planning my menu for Thanksgiving for a few weeks but it meant I had to start on Wednesday. Since I made those 5 (really 7) pies on Monday and Tuesday I was exhausted on Wednesday so I did not cook. Instead I had to do everything today. I got my self together and started cooking around 11 am. That was enough time to get it all done if I stayed focused. That lasted about two hours when my friends son called me and said he wanted to come by for a visit. He may not be able to before Christmas due to his new job. I said that would be nice. He and I sat out back for 1.5 hours with our masks on 6' apart. 

When he left I started cooking again but then my mother called and I spoke to her. Then a bit later my brother called. It seems my headset broke this week so I could not use it. Then my cousin called. It was so nice of all these people to think of me on this holiday. 

In between I was putting things in the oven and putting things on the stove and stirring and pouring. I finally got everything done when my cousin called and I ate through our phone call. Sorry about that but I was hungry and it was 7:30pm. 

I made a vegan Thanksgiving. Gratin Dauphinois, Pumpkin Quiche (but I used butternut squash because it was late and I already had some butternut squash cut up) and Wild Rice and Butternut Squash Bake. It all tasted delicious. I have leftovers for tomorrow. I am about to eat my lemon tart with a cup of tea.

DAY OF REST

 I was hoping to have a day of rest and recovery. I was doing really well at this but then I decided to make a quick curd to fill my empty pie crust. I had one "mistake" pie crust that I never filled with curd, so today I filled it. 

That was basically my whole day. I gave my dog walker his pie and he was so happy to get it.

THE PIES WERE DELIVERED

 Today was a whirlwind. I got up early and took a shower to get the day going. I fed the animals and started in on my plan. First up was the whipped cream for the banana cream pies. Well, that was the first problem. It wasn't my fault but I guess not all coconut milk is the same. I had to buy another brand because I was short a few cans and cans for the second pie didn't whip up like the cans for the first pie. I tried a few different things and ended up ditching the whole batch. Then what to do? I had only a very small can (always check the ounces when buying things online) of coconut milk. I went down to my pantry and found some cans of coconut cream. I never made whipped cream with coconut cream but cream is in the name so I took a chance and it worked. I finished the pie in time to let it chill for 2.5 hours.
I then got to take a short break. I needed it after whipping cream for 1.5 hours off and on. I garnished the lemon pies with the candy lemons and made the garnish for the banana cream: chopped pecans and almonds with chocolate shavings. For one of the pies I put the shavings in a baggy because I know the person's son has allergies. I figure I will let them decided if it is okay for the kiddo. 

 Then the hour arrived. I garnished the banana cream pies, carried them all upstairs to go in the boxes and then put them all in a Chewy box that held them perfectly. I put the box in the car and drove to their office.

 These pies were a surprise for the staff members so I stood outside the office and told the receptionist I was outside. The dentist came out and was so pleased with how they looked. She told me she was going to tell her friends. She also said I needed to charge more. I am going to research more about cost. I did this for her as a friend and to start out. Boy did I learn some lessons.

The things I learned: 1) always have extra ingredients on hand, 2) you never have too much time, 3) always make extra especially when you are trying a recipe for the first time, 4) when you make something for the first time assume the first one will be the "first pancake" the throw away, and 5) don't try and bake two pies at the same time when it is the first time you are baking that recipe. I ended up with two "first pancakes". One will go to my dog walker. It isn't horrible, it just wasn't perfect to sell. He will be happy with it. I am keeping the other. 


 I am happy it over and I think I would do it again with more planning time. I would charge more too. 

Now I have to think about Thanksgiving.

DAY THREE OF PIE PREP

 I woke up and got started on the pie making. First I had to make the pie crusts for the Lemon Pies. I made the mistake of making two pie crusts at once. I put them both in the oven at once. It would have been fine but I made the pie crusts too thick. Lesson learned when making a new recipe: make one first and see how it turns out, then make the rest. The two (I call them First Pancakes) are not terrible. They are just not sellable. So I had to remake the two crusts and then the third. I had some extra crust and made two tarts.

After a break, I made the lemon curd. I learned and made one portion of curd. It was not up to par so I put it in the First Pancake crust. I then fixed the curd and made three more curds. I filled three crusts and the tarts. I will fill the last crust in a day or so. It is for me to eat so I will do it later.

Then after a break I made the Candy Lemons to garnish the lemon pie. This was easy and I hope they turn out okay. I was running out of descent lemons at this point. I used over 20 lemons to make these pies and tarts. Some of them were from my tree and were super small (just over the size of a dollar coin). 

I am on track to finish on time. I have to find a bag to carry them when I deliver them. I have a list of things to do tomorrow morning.

DAY TWO OF PIE PREP

 Today I continued with my pie prep. First I cleaned out the refrigerator downstairs. I now have two completely empty shelves. Those should hold five pies. 

Then I cleaned off the stove. I know what you are thinking, how dirty is her stove? I clean it all the time. But today I did the deep dive clean. I have a very old Wedgewood stove and it is very hard to clean not like the new stoves. What I really need to do is take all the stove top pieces off and soak them in soapy water. But that is a task for another day. I cleaned them off so they sparkled. 

Then I cleared off my kitchen table so I can cool pies and do assembly on it.  I cleaned off my counter and made lots of room to assemble pies. 

I go my two deliveries from Amazon with my paper pie pans and 8" springform pan. Now I can start on the No Bake Banana Cream pie. I have two 8" pans now. I proceeded to make the crust and put it in the pan. They are chilling in the fridge. The crust is made out of nuts, dates and coconut oil basically. 

The rest will be done tomorrow and Tuesday morning. 

Then I made some roasted Romeanesco cauliflower, zucchini and broccoli and some baked tofu for dinner. It tasted marvelous.

It was a full day. I also talked on the phone with a friend who just moved to the Cincinnati area.

DAY ONE OF PIE MAKING PREP

 Today was a day of action. The first day to get things done. I had my first delivery: food. I have all my ingredients now to make the pies. I am waiting for the pie boxes, pie tins, pie springform pan (I wanted it for Christmas but now can't wait), and ink for my printer. 

I spent part of today planning some more with the help of my brother. Then my cousin helped me make what I call "Calling Card" to let people know where they can find me and who I am. I am going to put it with all the pies. I am also making my logo into stickers to close the pie boxes. Marketing is key!

Tomorrow is clean up and clear out day. I have to clear out the fridge and clear out space in my kitchen. I need to cool down pies, chill them and store them. That is a lot of space and flat space. I don't really have that much space. Tomorrow is the day to make it. Organization is key. I have enough ingredients to make extra pies if I need to. I am ready, I think. All my friends are telling me I am.

MAKING PIES

 Today I went to the dentist to get my crown put on. I thought it was going to be a normal dental appointment but it turned out to be so much more.

My dentist asked me if I was available to make some pies for her staff. Anyway it turned out that I am now making 5 pies next week. I went through decision making on what types of pies I thought I could make on such short notice, what shopping I had to do and what other things I needed to do to be ready. 

Phone calls were made to people for consultations: how much to charge? how do you make a certain type of pie?  

I finally got the final confirmation at about 10pm. I am super excited.

DAY ONE HUNDRED NINETY-FIVE OF COOKING COURSE

 Today was my first day baking with the Vegan Baking Essentials Part 2 chapter. I was excited and planned it out this morning. I made Pasteis de Nata - Blitz Puff Pastry with Vanilla Custard. This was originally a Portuguese egg custard tart but to make it vegan there is no egg. The vanilla custard is so creamy and delicious. The puff pastry is just the right crispiness. 


I made 12 of them and right after I took these photos I dropped two of them on the floor. Five second rule. I picked them up and ate them. My floors had just been vacuumed. I am not wasting such awesome food. 

I have a plan to make more delicious desserts but I have to wait until I get my food order for some of them.

BACK TO COOKING COURSE

 I am back to my cooking course! They sent me access to a new chapter Vegan Baking Essentials Part 2.  I am back to baking but this time I am excited to bake all the items in the chapter. Tomorrow I plan to bake the first dish.

Today I have to food shop for Thanksgiving. I want my food to show up next Tuesday so I planned it all out and got online right away exactly one week ahead of time. I had my list ready and ordered everything. I have my menu ready and I planned it all out. 

I also purchased some items from Costco that I have been waiting to go on sale. I ordered a power washer, phone system and some food. Oh, also some tape. Packing and scotch. Getting ready for the holidays.

I decided to pull out a folder that keep that has gift certificates. I am going to use as many as I can this month. I figure I better before they are useless.

VEGAN STIR-FRY BROCCOLI BOK CHOY AND ZUCCHINI

 Tonight is the night I am supposed to take Orencia. I am skipping it again because I have my crown dental appointment on Friday. I have not taken Orencia since my tooth infection well over a month ago. I could have started taking it last week but I am holding off until my crown is completed just in case. This time being off Orencia is really affecting me. I am not as tired but I am having all sorts of joint pain. Now I am having issues with my knees.

But good news: I am feeling SO much better being off the progesterone and estrogen. I really had such a little idea how much it was affecting me. I was in such a fog with the low blood pressure. I was unable to think and process things. I was so tired and miserable. I couldn't sleep and was so sleep deprived. I guess those drugs are just not for me which is so weird since I have been on birth control since I was 16 years old. There really should not be such a difference according to the doctor but I guess there is! I feel almost back to normal after being off them for two weeks.

 I made a wonderful stir-fry today. I cleaned out my vegetable bin and made a broccoli, bok choy and zucchini stir-fry with udon noodles. Delicious! 

I bought some clothes through an online store. I bought some jeans and a raincoat. One pair of jeans and the raincoat didn't fit. I called the company and I have to send the raincoat back to buy another coat for the same price. They have no exchange policy. So I have to wait until they get the return and then buy another. I packaged up the coat and jeans and took them to the post office to send back. Lucky and I walked them down. I wanted them mailed back as soon as possible.

VEGAN LEMON COOKIES

 Vegan Lemon Cookies!  I used the lemons that had fallen from my lemon tree when the gardener trimmed the tree. Some of the lemons were green and now they are turning yellow.  The recipe called for lemon extract, what?, yes, lemon extract. I think that is a travesty. I used fresh lemon juice and zest instead and the cookies turned out terrific. It was such a simple recipe that it only took a short time to make them and then glaze them. Next time I will make a double batch.

My cooking course has a new chapter coming out in a few days. Baking Essentials Part 2. I am excited to start baking more strenuous things. Although I had a hard time with some of the easy things lately.

Lucky and I took a walk around the block today. Then we got to the house and Lucky wanted to keep walking. She gets to the bottom of the stairs and puts on the brakes. She won't go up the stairs. This time I gave in and walked two more blocks with her. Then I called it quits to bake the cookies. 

I read somewhere that the best thing to do is to use the timer on your dishwasher so it turns on after peak electric usage hours. I didn't even know dishwashers had timers. Tonight I looked and low and behold my dishwasher has a timer. I set it at 7:50pm when I put my dinner dish inside to turn on at 8:50pm since my peak usage time ends at 9pm. That is a handy thing to know about. I will be using that more often since I tend to forget to turn on the dishwasher after peak usage times.

CHICKPEA, CARROT, TOMATO AND KOHLRABI SOUP

 I got a new vegetable this time in my veg box. It was a kohlrabi. I never cooked with a kohlrabi before so today I made a soup with it. Kohlrabi is called a German turnip and is in the family of cabbage, broccoli, cauliflower, kale, Brussels sprouts, collard greens, Savoy cabbage, and gai lan. I think it is a bit like a celery root. Not the taste but the texture. The soup tastes good. I used some coconut milk to make it a bit sweet. It has chickpeas, carrots, tomatoes and kohlrabi.


I just did a bunch of laundry today. Then Lucky and I took a walk. We ran into a few neighbors. For Day of Kindness we delivered cookies to a few people.

VEGAN CHUNKY MONKEY COOKIES

 Yes, I made vegan chunky monkey cookies. They are also oil-free and sugar-free. They are really good. There is peanut butter, walnuts and peanut butter on top and banana in the batter. Just say it: Yum!

I baked them at 6:30pm and was done at 7:10pm. It was really quick. 

It was another day of work but I got to take a walk to the post office. I also spoke to my niece to wish her a happy birthday and then bought her a birthday present. Her daddy helped me with a computer issue I had that had been lagging for a long time. I was so happy it got fixed.

NO-BAKE BANANA CREAM PIE

 I made the most amazing no-bake pie today. I had three bananas that were about to turn and needed to be used. So I thought banana cream pie!  Since it was a no-bake it was super easy to make and too no time at all. It tastes really good and not too sweet like other pies. 



I took a piece to my neighbor since he loves sweets. I will take another to my other neighbor and one to the dog walker tomorrow. 

I had to use a special technique to make this in a regular pan since I didn't have an 8" spring form pan. I am hoping Santa brings me one for Christmas.

That was practically my whole day besides working. I am feeling so much better off the estrogen and progesterone. I really had no idea how bad I was feeling on them. Now that I am off them for a week, I feel so much clearer and not so lightheaded. I am so much happier without that medicine. It is really surprising. I thought it was supposed to make people feel lighter. Not me.

DISHES STACK UP

 Today was a work day. I wanted to bake but I had to make up a bunch of work from being out sick on Monday. So, work I did. I also washed a bunch of dishes from being sick. The house was a bit of a mess just from one day of being ill. I just dropped things where they were so now I had to go around and pick them up. You know what it is like when you are sick. Dishes stack up.

I got a package of my new jeans. I am super stoked about this. I finally ordered a few pairs of new jeans. I have been wearing the same three pairs of jeans for almost two years. I have more jeans (they are different colors) but they are a smaller size and I can't fit in them right now. Well, I can fit in them now but not comfortably. I have two pairs I wear most days. I finally bought a few more pairs online with the hopes that they will fit. I have two pairs pre-covid and one fits just right and the other is a little loose. I hope these new pairs fit just a little loose. I bought the same brand, style and size. I bought a few different shades of jean color. 

I also bought a raincoat. It isn't the color I want but they didn't have the color I wanted. I worried that I would miss the stock so I bought another color. It is okay. I need a raincoat this year because it seems like it will be a rainy winter. I like a bright color since I use it to walk the dog. The raincoat has not arrived yet.

Then I bought dog food. The two regular places did not have the food in stock. I was worried that the food was recalled but it seems that it is a shipping issue. I found another place and they had it in stock and I bought it from them. I think we are going to see this more and more. My advice is not to leave your purchases until the last minute. Keep a supply in stock. My dog can't eat just any food. She is on a special diet.

FEELING BETTER

 I am feeling much better. Still not 100%. This evening I made some quick easy ramen soup. It is the first meal I have had in two days. Since liner (combo lunch and dinner) on Sunday. 

It was a rainy day and this soup was perfect.

BAD REACTION

 Okay, I am not sure what happened. Last night I had a lot of bagged popcorn that I always eat. It is a vegan carmel corn. I just love it. I will now say loved it. I got really sick from it at 5:30 am. I was sick from 5:30 - 8:30 am. It was horrible. I don't know exactly what went wrong but I was super sick.

I guess it is time to talk to my doctor about it. I never had this happen with carmel popcorn before. I never want it to happen again.

I spent the day in bed. I was wiped out. I only ate crackers and apple sauce.

BACKYARD PHOTO

 Here is the final photo of my backyard. It looks so good. Today I put the wooden chairs and green table way in my cubby for the winter. The table went under the deck for the winter. The only thing left are the two green chairs.

Today was work, laundry and the backyard. That's it. Such a boring weekend.

MOVIE COMMENTS WITH SPOILER ALERT

 Boring day. I spent the whole day invoicing clients. That is it. Nothing else. I am super proud I got it done in one sitting.

MOVIE SPOILER ALERT: Then I tried to watch Dune but was lost 2 minutes into it. Am I the only one that hated it after 2 minutes? Maybe I will try again when I am more focused. I switched to The Call of the Wild (circa 2019 I think). It was really good. I liked it better than other animal movies because the person died and not the dog.  Not that I wanted anyone to die but it seems easier that the old guy died rather than the dog. Sorry if you ignored my spoiler alert and read through and I ruined it for you.

BACKYARD IS FINISHED FOR NOW

 Today I went to get my root canal finished and my old crown removed. Now I have a post and a temporary crown. In two weeks I will get my "permanent" crown. I use air quotes because I learned that my crowns are not permanent.  They have a life about 15 years. I really need to learn to relax. She told me the slight pain I feel when I touch my face is just bruising and I should stop touching it. We shall see.

Then my gardener showed up and used his pressure washer to clean off my lower deck and stairs. Then my picnic table and chairs. They look like new! Then he cleaned off the slate and bridge. The slate is still dark (he thought he would be able to get it back to it's natural color) but we decided cleaning it should wait until the spring since it seems like it is going to be a rainy winter. Then he went to my neighbors yard and trimmed their tree. He spoke to them while cleaning my yard and asked them if he could trim the branches that hung over into my yard (I didn't realize he was doing this) and they hired him to trim their whole tree.

Over the whole project he cleared out two compost bins and 14 compost bags. This was an amazing clear out. The ivy is basically gone for now. The backyard looks like it did when I moved in (minus the pond). It is so great. Lucky loves to be able to walk and not have plants touch her. She really hates when things are wet and they touch her.

Once the picnic table and chairs are dry I am putting them away for the winter. I started storing my furniture in my cubbyhole for the winter.

CHANGE IN MEDICINE

 Today was another day with the gardener. He cleaned up some more and trimmed a little more. He took the 10 bags of compost out to the curb. He was going to power wash the slate but the hose on his power washer broke so he is coming back tomorrow. 

The backyard looks so great. There is so much more room and it looks so much airier. Spacier. I just love it now. The jungle look is gone. It looks more like it was when I moved into the house. Not so cluttered in the backyard.

I had a video appointment today with a doctor. For a while now I have not been feeling myself. I have been feeling dizzy, faint, tired, unfocused. I feel like I have a vise on my head and a buzzing in my head. When I moved my head to fast I got a bit dizzy. My blood pressure is really low. When I bend down and get up my blood pressure drops crazy low. 

Today the doctor said I should stop taking the medicine I am on and see if I feel better. I was taking estrogen and progesterone. I stopped the estrogen two days ago and will stop the progesterone today. If I feel better, then we know it was that. If I don't then it is something else. 

Tomorrow I go to the dentist to get my tooth fixed.

VEGAN TEMPEH BACON

 I made a toastie (grilled cheese) with tempeh bacon. I have had a tough time with vegan bacon in the past but decided to try this vegan bacon and it is SO much better. It isn't at all like real bacon which I love. It is just the smokey flavor. I made some and put it in the toastie and it gave it a little salty flavor. 

What is tempeh you ask? Tempeh is a traditional Japanese food made from fermented soybeans. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form. I have had a love/hate relationship with tempeh but I really like this tempeh bacon. 

I spent the day mostly on the couch taking it easy on doctor's orders. I have a doctor's zoom appointment tomorrow. I will find out more information then. 

By the way, my new microwave is working out great. It is a bit bigger but still fits in the space. It is clear the other microwave was dying. It was heating the dishes and not the stuff inside the dishes.

VEGAN LEMON POPPY SEED MUFFINS

 I wanted to bake something for Day of the Dead but it got late and I wasn't feeling quite up to baking what I wanted to bake because it had multiple steps. So, I baked lemon poppy seed muffins. I did get to use some of the lemons that fell off the lemon tree. Those muffins are so good. The drizzle was too thin because I was talking on a work phone call while I drizzled and couldn't stop to fix it. It still tastes amazing. Sweet and tart. Overall they are delicious.


I also made this cute little video of Lucky eating her vegan biscuit.

She really loves these biscuits.

Other than work, that is my whole day.

VEGAN DOG BISCUITS

 Today is National Cook For Your Pets Day so I decided to make homemade vegan dog biscuits. They are made from peanut butter, pumpkin (I used the rest of my fresh pumpkin), flax meal, cinnamon and oat flour. I could eat them. I mixed the ingredients and rolled it out. I used my little cookie cutters and made little biscuits. 


I made a little bag for the dog walker to take home to his dog. When Lucky came home she loved the biscuit. 

I worked some also.
